Rice flakes are rice that has been steamed and then flaked to release the starch.  

Flaked rice lightens the beer and provides a clean, crisp mouthfeel. It has a low EBC and a drier finish compared to flaked corn.  

Flaked rice has a low level of lipids and proteins but a high level of carbohydrates, which should be considered in the brewing process.
