Wheat malt, as the name suggests, is malt made from wheat instead of barley. Since virtually all production methods can be used on wheat, products such as dark wheat malt are available to the adventurous brewer. Wheat in the malt mix has certain advantages, as wheat has a high amount of protein which leads to better foaming and retention. Wheat is used in a number of beers such as Weizen and Berliner Weiss. Wheat can be tricky to brew with, as it increases the risk of 'Stuck mash', but adding rice husks to the mash will help with the density.
This wheat malt is short malted wheat (Chit wheat) so it does not contain any enzymes. Short malt is used to increase foam stability, but can be difficult to work with due to its high beta-glucan levels.
