Brewzyme-D – enzyme against diacetyl
Brewzyme-D is an enzyme based on ALDC (Alpha Acetolactate Decarboxylase) that helps reduce the formation of diacetyl during fermentation. By breaking down the precursor to diacetyl during fermentation, you can reduce maturation time and get the beer ready for serving faster.
The enzyme is added during yeast pitching, and can also be used during dry hopping to reduce the risk of diacetyl that can occur during hop creep. Brewzyme-D is suitable for both ales and lagers.
Benefits of Brewzyme-D:
- Helps reduce the formation of diacetyl
- Can reduce ripening time in storage by up to two weeks
- Can contribute to faster production and earlier bottling
- Suitable for dry hopping to reduce the risk of hop creep
- Suitable for both ale and lager
Dosage
HB (10 ml): 10 ml to 20 liters of beer
Pro (1L / 10L): 15-20 ml per hectolitre
Application
Active at temperatures between 10–40°C and pH 4.0–7.0.
Storage
Store in a cool place between 0–10°C. Do not freeze. Store tightly closed and protected from sunlight.
Note: Brewzyme-D works on the precursor to diacetyl, but does not remove diacetyl that has already formed in finished beer.
