The malt is roasted at a high temperature, giving it a lot of color along with distinct roasted flavor nuances of coffee, dark chocolate and heavily roasted malt.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan dir=\"auto\"\u003eBefore roasting, large parts of the husk are removed from the barley grain. The husk contains tannins that, when roasted heavily, can contribute bitterness and sharper burnt notes. By using husked barley, the CARAFA® Special series has a softer roasted feel and less husk bitterness than similar dark malts with husks.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan dir=\"auto\"\u003eCARAFA® Special III is the darkest of the three CARAFA® Special malts and provides the most color and a stronger roasted character than Special I and II.
