The malt is drum roasted, which gives it the dark color and characteristic flavor nuances of coffee and chocolate. During roasting, Maillard reactions occur between sugars and amino acids, which contribute to both color, aroma and flavor.

Before roasting, large parts of the husk are removed from the barley grain. The husk contains tannins that, when roasted heavily, can contribute bitterness and sharper burnt notes. By using husked barley, the CARAFA® Special series has a softer feel and less husk bitterness than similar dark malts with husks.

CARAFA® Special I is the lightest of the CARAFA® Special malts and can be used when you want darker color and roasted tones without them being too strong.

Color: 800–1000 EBC
Manufacturer: Weyermann, Germany

Produced by: Weyermann®
Re-packed by Olbrygging, Norway
